Touchdown Tomatillo Salsa with Corn Chips
12 medium sized green tomatillos
3 Serrano chiles
2 cups minced white onion, divided
1 clove garlic, minced
1 cup fresh cilantro, coarsely chopped
Dash of salt
Husk and wash the fresh tomatillos. Pat dry, stem and chop them. Rough chop the Serrano chiles. In a blender, puree the tomatillos, chiles, 1 cup minced white onion, garlic and cilantro until well-blended and smooth. In a large serving bowl, pour mixture and stir in the remaining 1 cup onion. Season to taste with salt. Refrigerate overnight or serve immediately with fresh corn chips. Score!
Dan Marino’s My Hero Sandwich
1/2 cup Mayo
1/4 cup Italian Dressing
3 cups shredded lettuce
1 loaf French bread (1 lb), cut lengthwise in half
1 pkg (8 oz) Bologna
16 slices Shaved Oven Roasted Turkey Breast
2 tomatoes, thinly sliced
6 slices sharp cheddar cheese
1 green pepper, thinly sliced
Mix mayo and dressing. Remove 1/4 cup; toss with lettuce. Brush cut sides of bread with remaining mayo mixture. Fill bread with lettuce mixture and stack remaining ingredients. Slice and serve. Yum!
Chocolate Fantasy Football Bites
6 squares Semi-Sweet Chocolate (like Bakers brand)
1/2 cup light corn syrup
1 Tbsp butter or margarine
1/2 tsp vanilla
4 cups cocoa sweetened rice cereal
White decorating gel
Microwave chocolate, corn syrup and butter in large microwaveable bowl on high 2 minutes 30 seconds, stirring halfway through. Blend in vanilla. Add cereal; mix well. Cool 10 min. Shape into 18 (3-inch-long) football shapes with lightly moistened hands. Place on large sheet of wax paper; cool completely. Use white decorating gel to add “laces” to footballs. Let stand until gel is firm. These footballs won’t be fumbled!
